📝 Ingredients

Mutton (mix boti): 1.5 kg

Oil: ¾ cup

Onions (medium, sliced): 3

Ginger garlic paste: 2 tbsp

Spices:

Salt: 1½ tbsp

Turmeric: ¾ tsp
-
Red chilli powder: 2 tbsp
-
Coriander powder: 3 tbsp
-
-
Water: 2 glasses
-
Tomatoes (chopped): 4 small (add when meat is 50% done)

Bottle gourd (Lokhi): 1.5 kg (peeled and cubed)

Green chillies: 4–5
-
Water: as required for gravy

Fresh coriander (chopped): 3–4 tbsp
👩🍳 Method

In a pot, heat oil and fry onions until light golden.

Add mutton and sauté until it changes color.

Add ginger garlic paste, cook for 2 minutes.

Add salt, red chilli, turmeric, coriander powder. Cook for 4–5 minutes.

Add 2 glasses of water and cook until the meat is 50% done.

Add tomatoes, mix well, cover, and cook until meat is tender.

Add bottle gourd, mix, and cook on high flame for 8–10 mins until oil separates.

Add green chillies, cook for 5 minutes.

Add more water if needed, bring to a boil, cover, and cook until everything is soft.

Garnish with fresh coriander and simmer for 2 minutes on low flame.
