🥭 Mango Cheesecake Recipe (No-Bake)
🧁 Ingredients
🔸 For the Base:

1½ cups digestive biscuits or graham crackers (crushed)

⅓ cup unsalted butter (melted)
🔸 For the Cheesecake Layer:

400g cream cheese (room temperature)
-
1 cup heavy cream or whipping cream
-
½ cup powdered sugar (adjust to taste)

1 tsp vanilla extract
-
2 tbsp gelatin or 2½ tsp agar-agar (vegetarian option)

¼ cup warm water
🔸 For the Mango Layer:

1½ cups mango purée (fresh or canned)
-
2 tbsp sugar (optional, based on mango sweetness)
-
1 tbsp gelatin or 1½ tsp agar-agar
-
3 tbsp warm water
🔸 Optional Garnish:

Fresh mango slices
-
Swirls of cream or mango puree

✅ Step 1: Prepare the Base

Combine crushed biscuits and melted butter.

Press into a springform pan evenly.

Refrigerate for 15–20 minutes until firm.
✅ Step 2: Cheesecake Layer

Bloom gelatin or agar-agar in warm water (5 min).

Beat cream cheese, sugar, and vanilla until smooth.

Whip cream to soft peaks in another bowl.

Fold whipped cream into cream cheese mixture.

Warm and dissolve gelatin; mix into filling quickly but gently.

Pour over base, level it, and chill for 3–4 hours.
✅ Step 3: Mango Layer

Mix mango puree with sugar (optional).

Bloom and dissolve gelatin/agar-agar in warm water.

Mix into mango puree.

Pour gently over set cheesecake layer.

Chill for another 2–3 hours until fully set.
